Chicken:
- 4 boneless, skinless chicken breasts, lightly pounded (about 2 lbs)
- Creole Cajun Seasoning, to taste
- 2 tablespoons olive oil
Creamy Garlic Herb Sauce:
- 1 tablespoon unsalted butter
- 1 shallot, finely diced
- 10 cloves of garlic
- 1 cup chicken stock or broth
- 1 tablespoon fresh-squeezed lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon dijon mustard
- 1 cup heavy whipping cream
- 1 tablespoon fresh tarragon, chopped
- 1 tablespoon fresh parsley, chopped
- 1/3 cup parmesan cheese, grated
Instructions
- Prepare the Chicken: Season chicken with Creole Cajun seasoning. Sear in a hot skillet until golden. Set aside.
- Make the Sauce: Sauté shallot and garlic. Add stock, lemon juice, spices, and mustard. Stir in cream, tarragon, parsley, and parmesan.
- Finish the Dish: Return chicken to the pan. Simmer until cooked through. Adjust seasoning to taste. Serve hot garnished with tarragon.
