  • juice from 1 lime (about 3 tablespoons)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Additional:

  • 4 cups baby arugula
  • 1/4 cup roasted, salted pistachios (shelled)

Instructions

  1. Prepare Watermelon Salad: Combine watermelon, watermelon rind, red onion, feta, and mint in a large mixing bowl.
