Watermelon Salad:

- 2 sprigs mint, leaves roughly chopped or torn
- juice from 1 lime (about 3 tablespoons)
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
Additional:
- 4 cups baby arugula
- 1/4 cup roasted, salted pistachios (shelled)
Instructions
- Prepare Watermelon Salad: Combine watermelon, watermelon rind, red onion, feta, and mint in a large mixing bowl.
- Dress the Salad: Drizzle lime juice and olive oil over the salad. Season with salt and pepper. Toss to coat.
