Beef Mixture

  • 1 pound 80% lean ground beef
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground paprika

Egg Wash

  • 1 large egg
  • 1 teaspoon water

Filling

  • 1 cup freshly shredded cheddar cheese
  • 1 green onion, thinly sliced
  • 1/4 cup chopped dill pickles

Egg Rolls

  • 10 egg roll wrappers
  • Sesame seeds and sea salt (optional, for garnish)

Instructions

  1. Cook the Ground Beef
    Add ground beef to a medium skillet set over medium-high heat. Cook for about 5 minutes, stirring often, until the beef is browned. Drain any excess grease from the skillet.
  2. Season the Beef
    Stir in the garlic powder, ground paprika, and kosher salt. Mix until well combined. Allow the mixture to cool for approximately 10 minutes.
  3. Prepare the Egg Wash
    In a small bowl, whisk together the egg and water to make an egg wash. Set aside.
  4. Prepare the Filling
    In a large mixing bowl, combine the cooled ground beef, shredded cheddar cheese, sliced green onion, and chopped dill pickles. Stir until thoroughly mixed.
  5. Assemble the Egg Rolls
    Lay the egg roll wrappers on a clean, flat surface. Place about ¼ cup of the filling in the center of each wrapper. Working one at a time, brush the edges of the wrapper with egg wash to seal. Fold the bottom corner over the filling, then fold in the left and right corners toward the center. Roll upwards to seal the egg roll. Repeat with the remaining wrappers.
  6. Preheat the Air Fryer
    Preheat your air fryer to 400°F (200°C) for 5 minutes.
  7. Cook the Egg Rolls
    Lightly spray the air fryer basket with nonstick spray. Lay the egg rolls seam-side down in a single layer in the basket. Brush the tops of the egg rolls with egg wash and sprinkle with sesame seeds and sea salt, if desired.
  8. Air Fry the Egg Rolls
    Air fry the egg rolls for 5 minutes. Flip them over and air fry for an additional 5 minutes, or until golden and crispy. Repeat the process until all egg rolls are cooked.
