Main Ingredients
- 1 lb. boneless, skinless chicken thighs, tenders, or breasts, sliced into 1/4″ thick strips
- 1 yellow bell pepper, cut into strips
- 1 red bell pepper, cut into strips
- 1 large zucchini, cut into sticks
- 1 red onion, sliced into half moons

- 2 Tbsps homemade taco seasoning
- 1 Tbsp avocado oil or olive oil
- Juice and zest of 1 fresh lemon or lime
Instructions
- Prepare Ingredients: Slice the chicken into ¼” thick strips. Cut the yellow and red bell peppers into strips, the zucchini into sticks, and the red onion into half moons. Place all prepared ingredients into a large mixing bowl.
- Season the Mix: Sprinkle the homemade taco seasoning over the chicken and vegetables. Drizzle with avocado or olive oil and add the juice and zest of one lemon or lime. Stir thoroughly so each piece is well coated with seasoning and oil.
- Preheat the Air Fryer: Set your air fryer to 390°F and allow it to preheat for 4 minutes to ensure evenly cooked ingredients.
- Air Fry Chicken Fajitas: Transfer the seasoned chicken and veggie mixture into the basket of your preheated air fryer. Cook at 390°F for 15-18 minutes, shaking or stirring the basket halfway through to achieve even cooking. The chicken should be cooked through and slightly browned.
