Description

Enjoy a cozy and delicious Apple Cinnamon Baked Oatmeal that’s perfect for a wholesome fall breakfast. Made with old fashioned oats, warm cinnamon, and fresh apples, this baked oatmeal is naturally sweetened with maple syrup and applesauce, creating a comforting dish that’s easy to prepare and bake to a golden brown perfection.

Ingredients

Scale

Dry Ingredients

  • 2 1/4 cups old fashioned oats
  • 1 3/4 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 3/4 cups unsweetened vanilla almond milk (or milk of your choice)
  • 1/2 cup unsweetened applesauce
  • 1/3 cup pure maple syrup (can use brown sugar or honey)
  • 2 tablespoons melted butter or coconut oil (slightly cooled)
  • 2 large eggs (beaten)
  • 2 teaspoons pure vanilla extract

Add-ins and Toppings

  • 1 cup diced apples (Honeycrisp recommended)
  • Optional toppings: whipped cream, yogurt, nut butter, drizzle of maple syrup or honey, sprinkle of brown sugar, dash of cinnamon, splash of milk, apple slices, or dried cranberries

Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish with nonstick cooking spray and set aside to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine the old fashioned oats, ground cinnamon, baking powder, and salt. Stir these together to ensure the spices and leavening agents are evenly distributed.
  3. Combine Wet Ingredients: In a medium bowl, whisk together the unsweetened vanilla almond milk, applesauce, pure maple syrup, melted butter or coconut oil, beaten eggs, and pure vanilla extract until smooth and well combined.
  4. Combine Wet and Dry Mixes: Pour the wet mixture into the bowl with the dry ingredients and stir well to combine everything evenly. Then fold in the diced apples, distributing them throughout the oatmeal mixture.
  5. Bake the Oatmeal: Pour the combined oatmeal mixture into the prepared baking dish. Place it in the oven and bake for 30 to 40 minutes, or until the oatmeal is set and the top is golden brown. The center should be firm to the touch.

Notes

  • This baked oatmeal is a perfect fall breakfast favorite, easy to prepare ahead and reheat for busy mornings.
  • Customize sweetness by adding optional toppings like a drizzle of maple syrup or a sprinkle of brown sugar.
  • For a dairy-free version, use coconut oil and a non-dairy milk alternative.
  • Honeycrisp apples work well due to their tartness and texture, but you can substitute any firm apple variety.
  • Store leftovers in the refrigerator for up to 4 days and reheat portions as needed.
