For the Brownie Cookies:

  • 2 four ounce bars (226g) semi-sweet chocolate, coarsely chopped
  • 3/4 cup (94g) all-purpose flour (spooned & leveled)
  • 1/4 cup (21g) natural unsweetened or dutch-process cocoa powder
  • 1 teaspoon espresso powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 5 Tablespoons (71g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) packed light brown sugar
  • 1/4 cup (50g) granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • optional: 3/4 cup (135g) semi-sweet chocolate chips

Instructions

  1. Melt the chocolate: In a double boiler or microwave, melt the chocolate until smooth. Set aside to cool slightly.
  2. Prepare dry ingredients: Whisk together flour, cocoa powder, espresso powder, baking powder, and salt. Set aside.
  3. Make the dough: Beat butter, brown sugar, and granulated sugar until creamy. Add eggs and vanilla, then mix in melted chocolate. Stir in dry ingredients and chocolate chips.
  4. Chill the dough: Cover and refrigerate for 20 minutes.
  5. Bake: Preheat oven to 350°F (177°C). Roll dough into balls and place on baking sheets. Bake for 12-13 minutes, then cool on a wire rack.
