  • 1 pint grape tomatoes, halved
  • 2 tbsp. freshly torn basil

Instructions

  1. Prepare and cook chicken: Heat 1 tablespoon of extra-virgin olive oil in a large skillet over medium-high heat. Season the boneless skinless chicken breasts on both sides with kosher salt and freshly ground black pepper. Place them in the hot skillet and cook until golden brown and cooked through, about 6 to 8 minutes per side. Once cooked, transfer the chicken to a plate and set aside.
  2. Make the balsamic tomato sauce: Using the same skillet, add the balsamic vinegar and minced garlic. Cook over medium heat until fragrant, about 1 minute.
