Ingredients

Units Scale

Carrot Ribbons:

  • 8 cups Carrot Ribbons from about 8-10 large, whole carrots

Parsley:

  • 1 cup Parsley or the tops from the carrots

Sauce:

  • 1 Clove Garlic grated on a microplane
  • Zest from 1 Lime
  • Juice from 1 Lime
  • 2 Tbsp Extra Virgin Olive Oil
  • 2 Tbsp Soy Sauce
  • 1/2 Tsp Fresh-Cracked Black Pepper
  • 1 1/2 Tbsp Toasted Sesame Seeds

Instructions

  1. Prepare Carrot Ribbons: Wash, dry, and peel the carrots. Use a vegetable peeler to create ribbons.
  2. Make Sauce: Combine parsley, garlic, lime zest, lime juice, olive oil, soy sauce, black pepper, and sesame seeds in a bowl. Adjust seasonings.
  3. Toss: Coat the carrot ribbons with the sauce.

Notes

  • Soy sauce provides enough saltiness, but you can add more if desired.
  • Consider adding toasted sesame oil for extra flavor, starting with small increments.
