This family-friendly main course is easy to prepare and perfect for busy weeknights or potluck dinners, offering a cheesy, golden biscuit crust and a rich, flavorful beef filling.

Ingredients

Units Scale

Beef Filling

  • 1.5 lbs lean ground beef
  • 1 yellow onion, diced
  • 1 tablespoon chopped garlic
  • 10.5 oz condensed cheddar soup
  • 10.5 oz condensed cream of mushroom soup
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups shredded cheddar cheese, divided (1 cup for filling, 1 cup for topping)

Biscuit Topping

  • 1 box Cheddar Bay Biscuit mix (with seasoning packet)
  • 1 cup shredded cheddar cheese
  • 2 cups milk
  • 1/4 cup butter, melted
  • Fresh chopped parsley (optional, for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking the cobbler.
  2. Brown the Ground Beef: In a large nonstick skillet over medium-high heat, cook the ground beef and diced onion. Crumble the beef as it cooks and continue until it’s fully browned, then stir in the chopped garlic for extra flavor.
  3. Prepare the Beef Filling: Once the ground beef is fully cooked, add the condensed cheddar soup, condensed cream of mushroom soup, 1/2 cup milk, salt, and pepper. Stir everything together until well combined. Then, add 1 cup of shredded cheddar cheese and mix it in. Remove the skillet from heat.
  4. Prepare the Baking Dish: Lightly spray a 9 x 13-inch baking dish with cooking spray to prevent sticking. Pour the ground beef mixture into the prepared dish and spread it in an even layer. Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the beef mixture.
  5. Mix the Biscuit Batter: In a large mixing bowl, pour in the Cheddar Bay Biscuit mix, setting aside the seasoning packet for later. Add 1 cup shredded cheddar cheese and 2 cups milk. Stir the mixture until no large lumps remain and the batter is smooth.
  6. Assemble the Cobbler: Pour the biscuit batter gently over the ground beef and cheese mixture in the baking dish, spreading it evenly to cover the filling.
  7. Bake: Place the dish in the oven and bake for 50–55 minutes, or until the biscuit topping is nicely browned across the top and cooked through.
  8. Finish the Topping: While the cobbler is baking, combine the melted butter and the reserved seasoning packet from the biscuit mix. When the cobbler is done, remove it from the oven and immediately brush the butter-seasoning mixture over the biscuit topping for extra flavor.
  9. Rest and Garnish: Let the cobbler rest for 5 minutes to allow the butter to soak in and the filling to thicken. Garnish with fresh chopped parsley if desired. Serve warm.

Notes

  • For extra flavor, add chopped bell peppers or mushrooms to the ground beef mixture.
  • If you prefer a spicier dish, mix a pinch of cayenne pepper or red pepper flakes into the filling.
  • Letting the cobbler rest before serving ensures the filling sets and prevents it from becoming runny.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
