Description

Cheesy chicken pasta is a comforting and flavorful dish that combines tender chicken, creamy cheese sauce, and perfectly cooked pasta. This recipe is easy to make and sure to become a family favorite!


Ingredients

Pasta:

  • 250g pasta, uncooked (around 8oz)

Sauce:

  • 2 tbsps oil
  • 4 cloves garlic, minced
  • 275g chicken, cut into bite-sized pieces (around 9.6 oz)
  • 1/2 tsp salt (adjust to your taste)
  • 1/2 tsp black pepper
  • 1/2 tsp red chilli powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/4 tsp oregano
  • 2 tbsps tomato paste
  • 1 tsp chilli sauce/sriracha
  • 130ml milk (1/2 cup + 1 tbsp)
  • 110ml double cream (1/4 cup + 3 tbsps)
  • 100g mozzarella cheese + extra to sprinkle on top (1 cup + extra)
  • 100120ml pasta water (around 1/2 cup)

Instructions

  1. Boil pasta: Add pasta to a pot with cold water, salt, and a little oil. Cook until al dente.
  2. Cook garlic: Warm oil in a pan, add minced garlic, and cook until golden.
  3. Cook chicken: Add chicken to the pan and cook until white.
  4. Seasonings: Add salt, pepper, spices, and mix into the chicken.
  5. Add tomato paste: Stir in sriracha and tomato paste.
  6. Making the sauce: Gradually add milk and cream, cooking until bubbling.
  7. Add cheese: Mix in cheese until melted.
  8. Add pasta water: Gradually add pasta water, bring to a boil.
  9. Add pasta: Coat cooked pasta in sauce, top with cheese, cover, and cook until melted.
  10. Serve and enjoy!

Notes

  • Adjust salt to taste considering salt from pasta water and cheese.
  • Add pasta water gradually for desired consistency.
  • Can substitute oregano with Italian seasoning or mixed herbs.
