- 12 small cubes of mozzarella cheese (about 1/2 inch)
Instructions
- Preheat oven and prepare muffin tin: Preheat the oven to 375°F and grease a 12-cup muffin tin.
- Mix dry ingredients: In a large bowl, whisk together flour, baking powder, oregano, garlic powder, salt, and pepper.
- Combine wet ingredients: In another bowl, beat eggs, milk, olive oil, and pizza sauce until well combined.
- Combine wet and dry ingredients: Pour wet ingredients into the dry ingredients and stir until just combined.
- Add cheeses and pepperoni: Fold in 3/4 cup of shredded mozzarella, Parmesan cheese, and 3/4 cup of mini pepperoni.
- Fill muffin cups: Fill each muffin cup halfway with batter.
- Add cheese cubes: Place a cube of mozzarella in the center of each cup. Top with remaining batter, ensuring the cheese cube is covered. Sprinkle remaining shredded mozzarella and mini pepperoni on top.
- Bake: Bake for 15-18 minutes, or until golden and bubbly.
