Thawed Cherries:
- 3 cups thawed whole, pitted cherries (2 (12 oz) bags of thawed dark pitted cherries)
Purified Water:
- 9 cups, divided
Granulated Sugar:
- 2 cups
Fresh Lemon Juice:
- 1-1 1/2 cups (Juice from about 7-8 large lemons)
Instructions
- Add the thawed cherries to the blender: Blend until pureed.
- Double strain the cherries: Use a fine mesh sieve or juicing bag. Once strained, you should have about 1 cup of cherry juice.
- Place cherry juice in a pitcher: Add 2 cups of heated water and sugar. Stir until sugar dissolves.
- Stir in fresh lemon juice: Add remaining cold water gradually, adjusting sweetness to taste.
- Chill and stir before serving: Serve over ice. Garnish with mint, cherries, or lemon slices if desired.
