Ingredients
Scale
Potatoes
- 4 medium/large potatoes, washed and cut into cubes
- Olive oil (for tossing potatoes, approximately 2-3 tbsp)
- Salt, to taste
- Black pepper, to taste
- Garlic powder, to taste
- Paprika, to taste
Chicken and Seasoning
- 2 chicken breasts, cut into cubes
- 1 tbsp dry ranch seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
Bacon and Cheese
- 6 strips of bacon, chopped
- 1 cup shredded mozzarella cheese
Additional
- Ranch dressing, for topping
Instructions
- Prepare Potatoes: Wash and cube the potatoes, then toss them in a bowl with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
- Air Fry Potatoes: Place the seasoned potatoes in an air fryer and cook at 400°F (approximately 200°C) for 20-25 minutes. Shake the basket a few times during cooking to ensure even crisping.
- Cook Bacon: While the potatoes cook, chop the bacon strips and fry them in a skillet over medium-high heat until crispy. Remove bacon from the pan, leaving about 2 tablespoons of bacon grease in the skillet.
- Cook Chicken: Add the cubed chicken to the skillet with the reserved bacon grease. Season with salt, pepper, paprika, and ranch seasoning. Cook until the chicken is fully cooked through and browned, then remove the pan from heat.
- Combine Ingredients: When potatoes are finished cooking, add them to the skillet with the chicken and stir well to combine.
- Add Cheese and Bacon: Sprinkle the shredded mozzarella cheese evenly over the potato and chicken mixture, then scatter the cooked bacon pieces on top.
- Melt Cheese: Place the skillet under the oven broiler for 2-3 minutes until the cheese melts and bubbles. Alternatively, cover the skillet with a lid and let it sit on the stove over low heat until cheese melts.
- Serve: Spoon servings onto plates and top each with a drizzle of ranch dressing. Serve immediately and enjoy!
Notes
- Ensure to shake the air fryer basket a few times to get evenly crispy potatoes.
- If you don’t have an air fryer, you can roast the potatoes in the oven at 425°F for 25-30 minutes, flipping halfway through.
- Leftover skillet can be stored in the fridge for up to 3 days and reheated on the stove or microwave.
- You can substitute mozzarella with cheddar or a blend of your favorite cheeses.
- Adjust seasoning amounts to taste, especially the ranch seasoning for desired flavor intensity.
