Description

This refreshing grape and feta pasta salad is a vibrant and flavorful dish perfect for a light lunch or as a side at your next picnic or barbecue.

Pasta:

  • 3 tablespoons salt, divided
  • 1 pound penne rigate

Dressing and Mix-ins:

  • 2 tablespoons aioli
  • 1 tablespoon olive oil
  • 1/4 cup pine nuts, toasted
  • 2 cups grapes, halved
  • 1/2 cup basil, chopped
  • 1/2 cup parsley, chopped
  • 6 ounces feta, crumbled
  • 1 tablespoon freshly cracked black pepper

Instructions

  1. Cook Pasta: Bring a large pot of water with 2 tablespoons of the salt to a boil. Cook the pasta until al dente, about 8 minutes, then strain and rinse in cold water.
  2. Prepare Salad: Transfer the pasta to a bowl and toss with aioli and olive oil. Season with remaining salt and black pepper. Add pine nuts, grapes, basil, parsley, and feta. Toss to combine.
