Description

A delightful and fluffy bread made with just a few simple ingredients! Cloud bread is light as air and melts in your mouth, making it a fun and versatile treat. Perfect for those seeking a gluten-free and low-carb alternative, this cloud-like bread is quick to prepare and an absolute joy to watch as it bakes into soft, golden domes.

Ingredients

Units Scale
  • 4 Egg Whites, from large eggs
  • 1/3 cup Granulated Sugar
  • 1 1/2 tablespoons Cornstarch
  • 1 teaspoon Vanilla Extract (optional) *See notes for using almond or lemon extract instead
  • A few drops of Food Coloring (optional)

Instructions

  1. Preheat the Oven
Preheat your oven to 300℉ and prepare a baking sheet with parchment paper. Ensuring the oven is preheated properly is crucial for even cooking and achieving the fluffy texture of the bread.
  2. Whisk the Egg Whites
In a mixing bowl, whisk the egg whites until they become frothy and bubbly. This step helps incorporate air into the mixture, which will give the cloud bread its characteristic fluffiness.
  3. Add Ingredients and Whisk
Gradually add the granulated sugar, cornstarch, vanilla extract (if using), and a few drops of food coloring (optional). Continue whisking the mixture until stiff peaks form. The stiff peak stage ensures that the mixture will hold its shape when baked.
  4. Shape the Bread Domes
Spoon the mixture onto the prepared parchment-lined baking sheet, forming two rounded domes. Use a spatula to smooth and shape the domes evenly. Let the formed domes sit at room temperature for about 5-10 minutes before baking, allowing them to set slightly.
  5. Bake
Bake the cloud bread in the preheated oven for 25-30 minutes. The bread is ready when the outside turns slightly golden in color or shows a golden hue if food coloring was used. Remove from the oven and enjoy immediately for the best texture.

Notes

  • To substitute the vanilla extract:
    • Use ½ teaspoon of almond extract for a nutty flavor.
    • Use ¼ teaspoon of lemon extract for a citrusy twist (a full teaspoon may overpower the flavor).
  • This bread is best enjoyed freshly baked. It will deflate and lose its texture within an hour or so of coming out of the oven.
