Description

Chicken marinade

  • 1 pound (or 500 grams) boneless skinless chicken breasts, cut into long strips
  • 2 tablespoons Greek yoghurt
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika powder
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • Black pepper and salt to taste
  • 1 tablespoon fresh cilantro leaves (optional)

Spicy dressing

  • 1 tablespoon Greek yoghurt
  • 1 tablespoon Mayonnaise
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon chilli flakes

Additional ingredients

  • 1 fresh mango, cut into cubes
  • 4 ounces (or 100 grams) mixed lettuce leaves
  • 1/2 cucumber, cut into sticks
  • 2 tomatoes, thinly sliced with seeds removed
  • 1 onion (red or sweet onion), cut into half moons
  • 4 flour tortillas

Instructions

  1. Marinate the chicken: In a mixing bowl, whisk together Greek yoghurt, lemon juice, cumin, paprika, oregano, cayenne pepper, fresh cilantro, salt, and pepper. Cut the chicken into long thin strips, add to the marinade, cover, refrigerate, and marinate for a minimum of 30 minutes up to 24 hours.
  2. Make the spicy mayo dressing: Combine Greek yoghurt, mayonnaise, cayenne pepper, chilli flakes, and curry powder in a small bowl; mix well.
  3. Grill the chicken: Heat a grill pan or griddle over medium heat. Grill the marinated chicken strips for 4 minutes on each side until golden brown and cooked through. Set aside.
  4. Assemble the wrap: Spread a teaspoon of spicy mayo dressing on each flour tortilla. Layer lettuce, tomato, onion, cucumber, mango cubes, and grilled chicken strips. Garnish with fresh cilantro.
