Gelatin Bloom

  • 2 1/2 tablespoons powdered gelatin (from 3 packets)
  • 1 cup cold water, divided (approximately 50°F)

Sugar Syrup

  • 1 1/2 cups granulated sugar
  • 3/4 cup light corn syrup
  • 1/2 teaspoon kosher salt

Flavor and Color

  • 2 teaspoons cotton candy flavoring (2 fluid drams)
  • Pink and blue food coloring

Coating

  • 3/4 cup powdered sugar

Instructions

  1. Bloom the Gelatin
    In the bowl of a stand mixer, whisk the powdered gelatin with half of the cold water. Let this mixture sit for 8–10 minutes to allow the gelatin to bloom fully.
  2. Prepare the Sugar Syrup
    While the gelatin is blooming, combine the remaining water, granulated sugar, corn syrup, and kosher salt in a medium saucepan. Place the pan over medium heat and whisk constantly for 6–8 minutes. The mixture will start to simmer and turn clear. Remove it from the heat once ready.
  3. Incorporate the Sugar Syrup
    Attach the whisk to your stand mixer and set it to low speed. Slowly pour the hot sugar syrup into the bloomed gelatin. Once combined, whisk the mixture on low for about 1 minute before increasing the speed to high. Whisk for 10 minutes, or until a fluffy, white, marshmallow-like consistency is achieved.
  4. Add Flavor and Color
    Add the cotton candy flavoring and whisk for another minute. Divide the marshmallow mixture evenly between two bowls, and stir in pink food coloring to one bowl and blue to the other.
  5. Prepare the Pan
    Dust a 9×13-inch pan with powdered sugar to prevent sticking. Spoon the pink and blue marshmallow mixtures into the pan in an alternating pattern. Use a rubber spatula to smooth the top and dust with the remaining powdered sugar. Cover with plastic wrap and let sit undisturbed for 8–12 hours to fully set.
  6. Cut and Serve
    Once the marshmallow slab has set, remove it from the pan and transfer it to a cutting board. Dust off excess powdered sugar before cutting the marshmallows into 1-inch squares. Serve immediately or store them for later enjoyment.
