Description

Fiesta Pinwheels are a quick and crowd-pleasing appetizer featuring soft flour tortillas filled with a creamy blend of cream cheese, sour cream, salsa, and shredded cheddar. Rolled and sliced into bite-sized spirals, these flavorful pinwheels are perfect for parties, snacks, or casual gatherings and pair wonderfully with extra salsa for dipping.

Ingredients

Scale

Filling

  • 2 (8 ounce) blocks cream cheese, softened to room temperature
  • 1 cup sour cream
  • 1 cup mild salsa (preferably Herdez brand)
  • 1 cup shredded cheddar cheese (or your favorite shredded cheese)

Assembly

  • 6 large flour tortillas (burrito size)
  • Extra salsa, for dipping

Instructions

  1. Prepare the filling: In a large bowl, combine softened cream cheese and sour cream, stirring until the mixture is smooth and well blended. Then, fold in the salsa and shredded cheddar cheese until evenly mixed.
  2. Assemble the pinwheels: Lay one large flour tortilla flat on a clean surface. Spread about 1/3 cup of the cream cheese mixture evenly over one half of the tortilla, spreading it smoothly. You can add more filling if you prefer a thicker layer.
  3. Roll the tortillas: Starting from the filled side, roll the tortilla tightly into a log shape, keeping the ends open. Repeat this process with the remaining tortillas and filling.
  4. Slice and serve or chill: With a sharp knife, slice each rolled tortilla into 1 1/2 inch thick pinwheel rounds. Serve immediately with extra salsa for dipping, or wrap the rolled tortillas tightly in plastic wrap and refrigerate until ready to serve.

Notes

  • These pinwheels are very versatile and can be made with any shredded cheese of your choice.
  • For spicier flavor, use medium or hot salsa instead of mild.
  • They can be prepared ahead of time and refrigerated for up to 24 hours, making them ideal for parties.
  • To keep tortillas pliable, warm them slightly before assembling.
