Creamy Lemon Garlic Butter Beans is a comforting and flavorful dish that combines tender butter beans with a rich, creamy sauce infused with lemon and garlic. This vegan recipe is quick to make and perfect for a satisfying meal.


Ingredients

For the Creamy Butter Beans:

  • 2 small shallots, diced, or 1 large
  • 45 cloves garlic, finely minced
  • 3 Tablespoons vegan butter
  • 30 ounces canned butter beans (2 cans with the liquid added to the pot)
  • 1/4 cup vegan cream cheese
  • 2 Tablespoons lemon juice
  • 1/2 Tablespoon lemon zest (zest of 1 lemon)
  • 3 cups spinach
  • Salt & pepper to taste (add salt as desired, but recommended at least 1/2 teaspoon pepper)

Instructions

  1. Prep: Finely dice the shallots and mince the garlic.
  2. Cooking: Melt vegan butter in a large pot over medium heat. Saute shallots and garlic for 3 minutes. Add butter beans with liquid, simmer for 5 minutes. Add cream cheese, lemon juice, and lemon zest, simmer for 2 minutes. Stir in spinach until wilted. Season with salt & pepper.
  3. Serve: Enjoy warm with toasted bread.

Notes

  • Serve with toasted sourdough or spelt bread.
  • Best enjoyed fresh but can be stored for 3-4 days in the fridge or 1 month in the freezer. Reheat before serving.
