Description

Creamy Spinach Gnocchi is a quick and delicious one-pan meal that combines pillowy gnocchi with a rich and flavorful creamy sauce packed with spinach and herbs.


Ingredients

For the Spinach:

  • Spinach
  • 1 tablespoon olive oil
  • 8 oz spinach
  • Salt and pepper, to taste

For the Gnocchi:

  • 16 oz potato gnocchi
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 teaspoon Italian seasoning or Herbs from Provence
  • 1/2 teaspoon smoked paprika, or more to taste
  • 1/4 teaspoon salt, to taste
  • Coarsely ground black pepper, to taste
  • Red pepper flakes, to taste

Instructions

  1. Cook spinach: Heat olive oil in a skillet, add spinach seasoned with salt and pepper, cook until wilted, then remove to a plate.
  2. Make the creamy sauce and cook gnocchi: In the same skillet, combine gnocchi, chicken broth, heavy cream, garlic, Italian seasoning, smoked paprika, and salt. Boil, cover, and cook for about 5 minutes. Add back cooked spinach, stir, and simmer for a couple of minutes. Adjust seasoning with salt, black pepper, red pepper flakes, and smoked paprika.
