For the Spinach:
- Spinach
- 1 tablespoon olive oil
- 8 oz spinach
- Salt and pepper, to taste
For the Gnocchi:
- 16 oz potato gnocchi
- 1/2 cup chicken broth
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1/2 teaspoon Italian seasoning or Herbs from Provence
- 1/2 teaspoon smoked paprika, or more to taste
- 1/4 teaspoon salt, to taste
- Coarsely ground black pepper, to taste
- Red pepper flakes, to taste
Instructions
- Cook spinach: Heat olive oil in a skillet, add spinach seasoned with salt and pepper, cook until wilted, then remove to a plate.
- Make the creamy sauce and cook gnocchi: In the same skillet, combine gnocchi, chicken broth, heavy cream, garlic, Italian seasoning, smoked paprika, and salt. Boil, cover, and cook for about 5 minutes. Add back cooked spinach, stir, and simmer for a couple of minutes. Adjust seasoning with salt, black pepper, red pepper flakes, and smoked paprika.
