Creamy Dressing
- 3 tablespoons mayonnaise
- 2 tablespoons Greek yogurt, plain
- 2 teaspoons granulated sugar
- 1/2 teaspoon poppy seeds
- 1 tablespoon lemon juice
- 1/4 cup parsley, chopped
Instructions
- Prepare the Fruit and Veggies: In a large mixing bowl, combine the diced apples, halved red seedless grapes, pineapple pieces, and sliced celery. Toss gently to mix.
- Make the Dressing: In a small mixing bowl, whisk together the mayonnaise, Greek yogurt, granulated sugar, poppy seeds, lemon juice, and chopped parsley until thoroughly combined.
- Combine Salad and Dressing: Pour the creamy dressing over the salad mixture. Toss gently until all fruits and vegetables are evenly coated with the dressing.
- Add Nuts: Stir in half of the walnuts or pecans to distribute them throughout the salad.
- Garnish and Serve: Sprinkle the remaining nuts over the top and add lemon zest if desired. Serve the salad chilled on leaves of Bibb lettuce.
