Creamy Dressing

  • 3 tablespoons mayonnaise
  • 2 tablespoons Greek yogurt, plain
  • 2 teaspoons granulated sugar
  • 1/2 teaspoon poppy seeds
  • 1 tablespoon lemon juice
  • 1/4 cup parsley, chopped

Instructions

  1. Prepare the Fruit and Veggies: In a large mixing bowl, combine the diced apples, halved red seedless grapes, pineapple pieces, and sliced celery. Toss gently to mix.
  2. Make the Dressing: In a small mixing bowl, whisk together the mayonnaise, Greek yogurt, granulated sugar, poppy seeds, lemon juice, and chopped parsley until thoroughly combined.
  3. Combine Salad and Dressing: Pour the creamy dressing over the salad mixture. Toss gently until all fruits and vegetables are evenly coated with the dressing.
  4. Add Nuts: Stir in half of the walnuts or pecans to distribute them throughout the salad.
  5. Garnish and Serve: Sprinkle the remaining nuts over the top and add lemon zest if desired. Serve the salad chilled on leaves of Bibb lettuce.
