Description

These Crispy Fried Olives Stuffed with Garlic and Cheese are a delightful appetizer featuring jumbo green olives filled with a creamy mixture of cream cheese, Parmesan, and garlic, then coated in panko breadcrumbs and deep-fried to golden perfection. They are bursting with flavor and perfect for parties or as a savory snack.

Ingredients

Scale

Filling

  • 2 jars Jumbo green olives (About 60 olives)
  • 4 oz Cream cheese (softened)
  • 1/4 cup Shredded Parmesan cheese
  • 4 Garlic cloves (pressed or finely minced)
  • Salt and Pepper, to taste

Breading

  • 2/3 cup All purpose flour
  • ½ tsp Salt
  • 1/4-1/2 tsp Dried oregano (optional)
  • 2 Large eggs
  • 2 cups Panko crumbs

For Frying

  • Oil for deep frying

Instructions

  1. Prepare Olives: Drain the olives from their jars. If they are not already pitted, carefully remove each pit using a cherry pitter. Set the pitted olives aside on a clean tray.
  2. Make Cheese Filling: In a small food processor, blend together the softened cream cheese, shredded Parmesan cheese, and pressed or minced garlic cloves until the mixture is relatively smooth. Season the mixture with salt and pepper to your taste.
  3. Fill Olives: Spoon the cheese mixture into a large pastry bag. Optionally, fit the bag with a round piping tip or simply cut the end of the bag to create an opening. Pipe the cheese filling into each olive, then place the filled olives on a baking sheet.
  4. Chill Filled Olives: Cover the baking sheet with the filled olives and refrigerate until you are ready to bread and fry them, allowing the filling to set slightly.
  5. Prepare Breading Stations: In a shallow bowl, combine the all-purpose flour, salt, and dried oregano if using. In a separate bowl, beat the eggs. In a third bowl, place the panko crumbs.
  6. Bread the Olives: Remove the olives from the fridge. One by one, dredge them first in the seasoned flour, then dip in the beaten eggs, and finally coat thoroughly with the panko crumbs. Ensure each olive is well-coated on all sides.
  7. Heat Oil: Pour enough oil into a deep frying pan or skillet to submerge the olives (about 2-3 inches deep). Heat the oil to 350°F (175°C) for deep frying.
  8. Deep Fry: Carefully place the breaded olives into the hot oil in batches, avoiding overcrowding. Fry for about 1-2 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
  9. Serve: Let the fried olives cool slightly, then serve warm as a flavorful appetizer or snack.
