Sauerkraut and Potatoes

  • 2 (14 ounce) cans sauerkraut, undrained (or 1 (2 pound) bag)
  • 5 or 6 potatoes, peeled and cut into large chunks
  • 1 cup water
  • 1 teaspoon caraway seeds
  • 1 bay leaf
  • 1/4 teaspoon pepper

Sausage

  • 1 pound Polish sausage, cut into chunks (can substitute smoked sausage)


Instructions

  1. Prepare Ingredients. Peel the potatoes and cut them into large chunks. Cut the Polish sausage into bite-sized pieces.
  2. Layer in Crock Pot. Place the sauerkraut and potatoes into the crock pot, and sprinkle the caraway seeds, bay leaf, and pepper over them. Pour in 1 cup of water to help the ingredients cook evenly and keep moist.
  3. Add Sausage. Arrange the sausage pieces on top of the sauerkraut and potatoes in the crock pot.
  4. Cook. Cover and cook on high for 4 hours or on low for 6 hours, until the potatoes are tender and the flavors are well blended.
