Refreshing and hydrating, this Cucumber Mint Cooler is a perfect drink for a hot summer day. Made with fresh cucumbers, green apples, honey, and a hint of lime, it’s a delightful blend of flavors.


Ingredients

For the Cucumber Mint Cooler:

  • 1 1/2 cups cold water
  • 2-3 handfuls of ice
  • 1 cucumber, sliced
  • 1 green apple, cored and sliced
  • 1/4 cup 100% pure honey (or other sweetener of choice)
  • Juice of one lime (about 2 tablespoons of juice)
  • Several fresh mint leaves

Instructions

  1. Add the ingredients to a high-speed blender: Add water, ice, cucumber, apple, honey, lime juice, and mint leaves to the blender in the order listed.
  2. Blend until smooth. If grinding the mint leaves into the drink, add them now. If infusing, add the leaves to the finished drink and refrigerate for a few hours before serving. Remove leaves before consuming.

  3. Keep refrigerated for 2-3 days: Store any leftovers in the refrigerator for up to 2-3 days.
