Description

A flavorful and easy-to-make Cumin Chicken & Chickpea Skillet that combines tender chicken pieces with chickpeas in a fragrant spice blend, served with a garnish of fresh parsley.

Spice Blend:

  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper

Main Ingredients:

  • 1 pound boneless, skinless chicken breasts, trimmed and cut into 1-inch pieces
  • 2 tablespoons extra-virgin olive oil, divided
  • 1 large yellow onion, chopped
  • 2 tablespoons no-salt-added tomato paste
  • 4 cloves garlic, minced
  • 1 (15-ounce) can no-salt-added chickpeas
  • 1 (14-ounce) can no-salt-added diced tomatoes
  • 1 tablespoon lemon juice
  • 1/4 cup chopped fresh flat-leaf parsley

Instructions

  1. Prepare Spice Blend: Combine cumin, paprika, coriander, salt, and pepper. Toss chicken with a portion of the spice mix.
  2. Cook Chicken: Brown seasoned chicken in oil in a skillet.
  3. Sauté Aromatics: Cook onion, tomato paste, garlic, and remaining spice mix until onion softens.
  4. Add Remaining Ingredients: Incorporate chickpeas, tomatoes, and cooked chicken; simmer until chicken is done.
  5. Finish and Serve: Stir in lemon juice, garnish with parsley, and serve hot.
