Instructions
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, ground cinnamon, and a pinch of salt until evenly combined.
- Prepare Dough: In a large bowl, beat softened unsalted butter and powdered sugar on medium speed for about 1 minute until the mixture becomes pale and fluffy. Add the egg and vanilla extract and beat again until fully incorporated. Gradually stir in the flour mixture until the dough just comes together.
- Chill Dough: Form the dough into a disc shape, wrap it tightly in plastic wrap, and refrigerate for at least 1 hour to firm up.
- Preheat Oven and Roll Dough: Preheat your oven to 350 degrees F. On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Use oval, egg, or skull-shaped cookie cutters to cut out shapes. Place the cookies 2 inches apart on baking sheets lined with parchment paper. Refrigerate the cut cookies for about 15 minutes until firm.
- Bake Cookies: Bake the cookies in the preheated oven for 8 to 10 minutes, until they are crisp and set. Remove from the oven and transfer to cooling racks to cool completely.
