Ingredients
Scale
Chicken Mixture
- 1 tbsp oil
- 1 lb chicken breast, cut into small pieces
- 1 tbsp taco seasoning
- 1/2 large bell pepper, diced, any color
- 1/2 yellow onion, diced
Quesadillas
- 2 tbsp unsalted butter
- 6 flour tortillas
- 2 cups Mexican cheese
Instructions
- Preheat and Cook Chicken: Preheat a skillet with 1 tablespoon of oil over medium heat. Add the small pieces of chicken breast along with 1 tablespoon of taco seasoning. Cook the chicken for about 4 minutes, stirring occasionally to ensure even cooking.
- Add Vegetables and Continue Cooking: Add the diced bell pepper and yellow onion to the skillet with the chicken. Cook for another 5 minutes or until the chicken is fully cooked and the vegetables are slightly caramelized, developing color and softness. Remove the mixture from the heat and set aside.
- Prepare Quesadilla Base: On a clean skillet, melt a small amount of butter or add a bit of oil over medium heat. Place one flour tortilla on the skillet.
- Assemble Quesadilla: Sprinkle a layer of Mexican cheese on one half of the tortilla, then add a portion of the chicken and vegetable mixture on top. Add more cheese over the chicken mixture for extra meltiness, then fold the tortilla over to cover the filling.
- Cook Quesadilla: Cook the folded tortilla for a few minutes until the bottom side turns golden brown. Flip carefully and cook the other side until golden brown and the cheese is melted inside. Adjust heat as needed to prevent burning.
- Repeat and Serve: Repeat the assembly and cooking process with the remaining tortillas and filling. Serve the quesadillas warm for the best flavor and texture.
Notes
- Use any color bell pepper you prefer or have on hand.
- For extra spice, add a pinch of cayenne or hot sauce to the chicken mixture.
- Feel free to substitute flour tortillas for whole wheat or corn tortillas if desired.
- Use a mix of cheeses like cheddar and Monterey Jack for enhanced flavor.
- Ensure the skillet is not too hot to avoid burning the tortillas before the cheese melts.
