Description

These easy grilled potatoes are a perfect side dish for your summer cookout! Seasoned with garlic, dried herbs, and a touch of lemon, these potatoes are cooked to perfection in foil packets on the grill. Crisp on the outside, tender inside, and topped with melted cheese, they’re a crowd-pleaser guaranteed to complement any main course.

Ingredients

Units Scale

Potatoes

  • 2 pounds Yukon gold potatoes or red potatoes

Seasoning

  • 3 tablespoons olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 2 teaspoons garlic powder
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano

Optional Topping

  • 1/4 cup shredded Parmesan cheese or cheddar

Instructions

  1. Prepare the Potatoes
Preheat the grill to medium-high heat. Scrub the potatoes to thoroughly clean them and cut them into bite-sized chunks.
  2. Season the Potatoes
Place the potatoes in a large mixing bowl. Drizzle them with olive oil, and add the lemon juice, garlic powder, salt, pepper, thyme, rosemary, and oregano. Toss everything together until the potatoes are evenly coated with the seasoning.
  3. Assemble the Foil Packets
Take 4 large sheets of foil (double-layer if needed). Divide the seasoned potatoes evenly among the foil sheets. Seal the foil tightly to create packets, ensuring the edges are secure to trap the steam while cooking.
  4. Grill the Potatoes
Place the foil packets on the preheated grill. Let the potatoes cook for 20 minutes, flipping or rotating the packets occasionally to ensure even cooking and avoid hot spots.
  5. Serve and Finish
Carefully remove the foil packets from the grill and allow them to cool slightly. Open the packets and top with shredded Parmesan or cheddar cheese. You can also serve with sour cream for an extra layer of flavor.
