These Easy Saucy Ramen Noodles are a flavorful and satisfying dish that can be customized with your favorite vegetables and proteins. The noodles are coated in a savory and slightly sweet sauce, making them a perfect quick meal option.

- 2 servings dry instant ramen noodle cakes or other noodles of choice (around 140 g total)
For Sautéing
- 10 oz extra firm tofu, veggies, or mushrooms of choice sliced
Sauce (see notes)
- 1 cup water or vegetable broth (see notes)
- 5-7 tbsp soy sauce adjust according to desired taste
- 1.5 tsp dark soy sauce, optional for color
- 2-3 tbsp corn starch, see notes
- 1-3 tbsp sugar, maple syrup, or other liquid sweetener, adjust according to desired sweetness
- 2 tbsp rice vinegar, white vinegar, or lemon juice, adjust according to desired sourness
- 1/4 tsp ground pepper
- 1/2 tbsp chili garlic sauce or other hot sauce, optional for spice
- 1 tbsp sesame oil
- 2 cloves garlic minced (optional)
For Serving
- Chopped scallions for topping
- Sesame seeds for topping
Instructions
- Mix all the sauce ingredients until well incorporated. Adjust as needed for taste preferences. Set aside.
- Boil water and cook noodles until partially done. Drain and set aside.
- Sauté veggies/tofu in a pan.
- Add prepared sauce to the pan and simmer until thickened.
- Incorporate noodles into the sauce and cook until well coated and thickened.
- Season to taste and garnish with sesame seeds and scallions. Enjoy!
Notes
- If adding more veggies, double the sauce recipe.
- Adjust soy sauce if using vegetable broth.
- Start with 2 tbsp corn starch for the sauce and adjust as needed.
