Description

This Vanilla Custard Slice features flaky puff pastry layers filled with smooth, creamy vanilla custard and topped with a classic pink icing. It’s an easy-to-make dessert reminiscent of a bakery favorite, perfect for sharing at gatherings or enjoying as a sweet treat.

Puff Pastry

  • 2 sheets puff pastry (thawed)

Custard Filling

  • 65 g (½ cup) custard powder
  • 610 g (2 ½ cups) milk
  • 55 g (¼ cup) caster sugar

Pink Icing

  • 500 g (2 ½ cups) icing sugar mixture
  • 50-75 g (4-5 tbsp) water (see notes)
  • 1-2 drops pink food colouring (optional)


Instructions

  1. Prepare the Puff Pastry: Preheat your oven to 200°C (390°F). Place the thawed puff pastry sheets on a baking tray lined with baking paper. Bake for about 15 minutes or until golden and puffed. Remove from oven and allow to cool completely.
  2. Make the Custard: In a medium saucepan, whisk together the custard powder, caster sugar, and about 1/3 of the milk until smooth. Gradually add the remaining milk while whisking to avoid lumps. Cook over medium heat, stirring constantly until the mixture thickens and comes to a gentle boil. Remove from heat and let it cool slightly, stirring occasionally.
  3. Assemble the Slice: Once the pastry sheets are cool, place one sheet on a flat surface or serving tray. Spread the custard evenly over it. Top with the second sheet of puff pastry, pressing gently to adhere, ensuring the custard layer stays intact.
  4. Prepare the Pink Icing: In a bowl, combine the icing sugar mixture with water, starting with 50 g and adding more gradually to reach the desired consistency—thick but spreadable. Add 1-2 drops of pink food colouring if using, and mix until smooth and evenly coloured.
  5. Ice the Top: Spoon the pink icing over the top puff pastry layer and spread evenly using a spatula. Allow the icing to set before cutting.
  6. Chill and Serve: Refrigerate the assembled custard slice for at least 4 hours (or preferably overnight) to allow the custard to set firmly. Cut into 9 squares and serve chilled for best results.

Notes

  • Use chilled puff pastry sheets for best puff and flakiness.
  • The amount of water in the icing may vary depending on humidity; add water gradually to achieve a smooth consistency.
  • Refrigerate the slice to allow the custard to set properly, making slicing easier and cleaner.
  • Pink food colouring is optional but provides the classic bakery look—feel free to omit or substitute with other colours.
