For the Soup:

  • 2 tablespoons olive oil
  • 1 pound beef short ribs
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste

For Serving:

  • 4 slices French bread
  • 1 cup Swiss or Gruyère cheese, shredded

Instructions

  1. Heat oil in a large pot. Season and sear short ribs for 4-5 minutes per side until browned. Remove.
  2. In the same pot, cook onions for 15-20 minutes until caramelized. Add garlic and cook for an additional 1-2 minutes.

  3. Return beef to the pot with broth, vinegar, and seasonings. Simmer covered for 1.5-2 hours until the meat is tender.
  4. Shred the meat and return it to the soup. Top bowls with toasted bread and cheese. Broil for 2-3 minutes until bubbly.

Notes
