For the Soup:
- 2 tablespoons olive oil
- 1 pound beef short ribs
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 6 cups beef broth
- 1 tablespoon balsamic vinegar
- 1 teaspoon fresh thyme
- 1 bay leaf
- Salt and pepper to taste
For Serving:
- 4 slices French bread
- 1 cup Swiss or Gruyère cheese, shredded
Instructions
- Heat oil in a large pot. Season and sear short ribs for 4-5 minutes per side until browned. Remove.
- Return beef to the pot with broth, vinegar, and seasonings. Simmer covered for 1.5-2 hours until the meat is tender.
- Shred the meat and return it to the soup. Top bowls with toasted bread and cheese. Broil for 2-3 minutes until bubbly.
In the same pot, cook onions for 15-20 minutes until caramelized. Add garlic and cook for an additional 1-2 minutes.
