Ingredients

Units Scale

Fruit & Yogurt Mixture

    • 2 cups fresh cherries, pitted and roughly chopped
    • 1 1/2 cups plain Greek yogurt
    • 1 scoop vanilla or chocolate protein powder (optional)
    • 1/4 cup raw honey or maple syrup
    • 2 teaspoons vanilla extract

Chocolate Drizzle

  • 1/2 cup dark chocolate chips
  • 1 teaspoon organic unrefined coconut oil

Instructions

  1. Prepare Your Workspace:
Line a sheet pan with parchment paper and clear space in your freezer to accommodate the sheet pan flat for freezing the clusters later.
  2. Mix the Ingredients:
In a large bowl, combine the pitted and chopped cherries, Greek yogurt, protein powder (if using), honey or maple syrup, and vanilla extract. Stir until everything is well combined.
  3. Form the Clusters:
Divide the mixture evenly into 6 portions. Scoop each cluster onto your prepared sheet pan, leaving some space between them to prevent sticking.
  4. Freeze the Clusters:
Place the sheet pan in the freezer and freeze for at least 2 hours, or until the clusters are firm and frozen solid.
  5. Prepare the Chocolate Drizzle:
Melt the dark chocolate chips together with the coconut oil, whisking until the mixture is smooth and silky.
  6. Drizzle and Serve:
Remove the frozen clusters from the freezer and drizzle each with the melted chocolate. Serve immediately for optimal texture and flavor.
  7. Store Leftovers:
Wrap any leftovers tightly and store them in the freezer for up to 8 weeks to enjoy later.

Notes

  • For best texture, serve straight from the freezer, as they can become soft if left out for long.
  • Feel free to switch the sweetener between honey and maple syrup according to your dietary preference.
  • You can substitute other fruits for cherries, such as berries or peach chunks.
  • The protein powder is optional and can be omitted for a lighter version.
  • Be sure your sheet pan fits in the freezer before preparing the clusters.
