Description

A flavorful and aromatic dish of Garlic Fried Tomatoes, cooked until tender and juicy in a fragrant mix of garlic, chilies, and mint. Perfect to serve with crusty bread for a delicious Mediterranean-inspired meal.


Ingredients

Tomatoes:

  • 4 to 6 large vine ripe tomatoes, about 2 1/2 lb

Seasoning:

  • 1/4 cup extra virgin olive oil
  • 10 garlic cloves, finely chopped
  • 2 to 3 fresh green chilies, finely chopped
  • 1/2 tsp salt
  • Small bunch of fresh mint leaves, finely chopped, or 2 teaspoons dried mint

Instructions

  1. Slice the Tomatoes: Using a sharp knife, slice each tomato horizontally in half.
  2. Cook Tomatoes: Arrange the tomato halves cut-side down in a frying pan with olive oil. Flip, add garlic, chilies, and salt. Cover and cook until softened.
  3. Finish and Serve: Sprinkle with mint, cover, and cook briefly. Serve hot with bread.
