Tender chicken breasts and seasoned potatoes cook together in a creamy garlic parmesan sauce, topped with melted mozzarella cheese for a comforting, cheesy finish. Ideal for a hearty family dinner with minimal prep and effortless cooking.

Ingredients

Units Scale

Potatoes

  • 5 medium-sized potatoes, cubed
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste
  • Paprika, to taste

Chicken

  • 1 lb chicken breasts, cubed
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce, enough to cover (about 1/2 to 3/4 cup)
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare the Potatoes: Wash and cube the potatoes into evenly sized pieces. Spray the inside of the crockpot with cooking spray to prevent sticking. Add the cubed potatoes to the crockpot and season them with olive oil, salt, pepper, garlic powder, and paprika. Stir well to coat the potatoes evenly with the seasonings.
  2. Season the Chicken: Cube the chicken breasts into bite-sized pieces. In a bowl, season the chicken with salt, pepper, paprika, onion powder, and Italian seasoning. Add the minced garlic and mix thoroughly. Pour Buffalo Wild Wings Garlic Parmesan Sauce over the chicken, mixing to coat all pieces well.
  3. Cook in the Crockpot: Add the seasoned chicken on top of the potatoes in the crockpot. Set the crockpot to cook on low heat for about 6 hours or until the potatoes are tender and the chicken is fully cooked. Stir the mixture occasionally if possible to combine flavors and prevent sticking.
  4. Add Cheese: Once cooked, sprinkle shredded mozzarella cheese evenly over the top of the chicken and potatoes. Close the lid and let the cheese melt for a few minutes before serving.
  5. Serve: Serve the garlic parmesan chicken and potatoes hot, optionally topped with ranch dressing for added flavor. Enjoy this hearty and satisfying meal!

Notes

  • Feel free to adjust the seasonings such as garlic powder, paprika, and Italian seasoning to suit your taste preferences.
  • Ensure the potatoes are evenly coated with the olive oil and seasonings to maximize flavor absorption during cooking.
  • Check the chicken for doneness before serving to ensure it is thoroughly cooked to a safe internal temperature.
  • Use a meat thermometer if unsure, chicken should reach at least 165°F (74°C) internally.
  • For a richer flavor, you can add a sprinkle of fresh parsley or grated Parmesan cheese before serving.
