Skewers
- 1/4 cup extra virgin olive oil
- 1 shallot, chopped
- 4 cloves garlic, chopped
- 2 teaspoons dried oregano
- 1 teaspoon chipotle chili powder
- 1 teaspoon honey
- 1–3 tablespoons harissa sauce (or use hot sauce)
- 1 tablespoon lemon zest
- Salt and black pepper
- 1 1/2 pounds chicken breasts, cut into bite-size chunks
- 1–2 cups Tzatziki sauce
- 1/2 cup garlic tahini (recipe in notes)
Feta Fries
- 4 russet potatoes, cut into 1/4-inch-thick matchsticks
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/2 cup mixed herbs – dill, basil, parsley
- 1 teaspoon lemon zest
- 1 clove garlic, grated
- 2 tablespoons toasted sesame seeds
- 1/2 cup crumbled feta cheese
Instructions
- Prepare the Chicken Marinade: In a bowl, mix the olive oil, shallots, garlic, oregano, chipotle chili powder, honey, harissa sauce, lemon zest, salt, and black pepper. Add the chicken and toss to coat. If time allows, let it sit for 10 minutes to allow the flavors to deepen.
- Preheat the Oven: Set the oven to 450° F to prepare for baking the skewers and fries.
- Prepare and Cook the Chicken Skewers: Thread the chicken chunks onto skewers and arrange them on a baking sheet. Bake for 20-25 minutes, or until lightly charred and cooked through.
- Prepare the Fries: Toss the potatoes with olive oil, garlic powder, cayenne pepper, and a pinch of black pepper in a large bowl. Spread the potatoes in an even layer on a sheet pan and bake for 15-20 minutes. Flip the potatoes and bake for an additional 15 minutes, or until crispy.
- Season the Fries: In a separate bowl, combine the fresh herbs, lemon zest, grated garlic, sesame seeds, and feta cheese. Once the fries are finished baking, toss them on the sheet pan with the herb and feta mixture. Season with salt to taste.
- Serve: Plate the chicken skewers with the fries. Serve alongside Tzatziki sauce and garlic tahini (see recipe in notes). Enjoy your flavorful meal!
Notes
- Garlic Tahini: Combine 1/2 cup tahini, 3 tablespoons lemon juice, 1-2 cloves grated garlic, and 1/4 cup cold water in a blender. Blend until smooth, adding additional water if needed to thin the sauce to your desired consistency. Season to taste with salt.
- For best flavor, allow the chicken to marinate for at least 30 minutes or longer if time permits.
- Adjust the level of spiciness of the fries by varying the amount of cayenne pepper and harissa sauce as per your taste.
