- ⅓ English cucumber, thinly sliced
- 1 medium avocado, sliced
- ⅔ cup alfalfa sprouts
Instructions
- Make the Sauce: In a small mixing bowl, whisk together the Greek yogurt, mayonnaise, grated garlic, fresh chives, finely chopped tarragon, lemon zest and juice, olive oil, salt, and black pepper until smooth and well combined.
- Prepare the Bread: Spread about 2 tablespoons of the prepared yogurt-mayo herb sauce evenly over each slice of whole-wheat bread to ensure the flavors soak into the bread.
- Assemble the Sandwiches: Take two of the prepared bread slices with sauce and layer evenly with half of the arugula, mozzarella slices, thin cucumber slices, and avocado slices. Top with half of the alfalfa sprouts, distributing them evenly over the avocado.
- Close the Sandwiches: Place the remaining two slices of bread over the prepared halves, sauce side down, gently pressing to close the sandwiches.
