Grilled Peaches:
- 2 peaches, pitted and halved
- 1 Tbsp. olive oil
Salad:
- 3 cups baby arugula (or other favorite greens)
- 1/3 cup pecan halves, toasted
- 1/3 cup crumbled feta or bleu cheese
Vinaigrette:
- 3 Tbsp. olive oil
- 1 Tbsp. balsamic vinegar (or white wine vinegar)
- freshly ground black pepper and salt
Instructions
- Prep the Peaches: Brush all sides of the peaches lightly with 1 Tbsp. olive oil. Grill the peaches over a medium fire until they brown lightly and begin to soften slightly, 4 to 6 minutes on each side. Transfer the grilled peaches to a platter and let them cool slightly. Cut each half into 1/2-inch-thick wedges.
- Prepare the Vinaigrette: Whisk together balsamic vinegar, olive oil, salt, and pepper in a small bowl. Toss the arugula with the vinaigrette in a large bowl until evenly coated.
- Assemble the Salad: Divide the dressed arugula among 4 salad plates. Top each with feta or bleu cheese and toasted pecans. Arrange grilled peach wedges on top of each salad. Serve immediately.
