Description

A refreshing and flavorful salad featuring grilled zucchini, halloumi cheese, peas, and a zesty mint, dijon, and lemon dressing. Perfect for a light and satisfying meal.


Ingredients

Salad Dressing:

  • 40 ml olive oil
  • 40 ml lemon juice
  • 20 gm dijon mustard
  • 1/2 tsp salt flakes
  • 4 grinds black pepper, fresh

Grilled Bits:

  • 700 gm zucchini, sliced into rounds
  • 250 gm baby peas
  • 200 gm halloumi cheese, sliced
  • 1 bunch mint

Instructions

  1. Salad Dressing: In a small bowl, combine olive oil, lemon juice, dijon mustard, salt, pepper, and set aside.
  2. Grilled Bits: Toss zucchini and halloumi in a bowl with part of the dressing. Grill until marked, then toss with remaining dressing. Cook peas, then combine with zucchini and halloumi. Season with salt, pepper, and mint.
