Banana Popsicles

Instructions
- Prepare Ghost Banana Pops: Line a large baking sheet with parchment paper or a silpat mat. Peel 2 bananas and slice each in half crosswise. Then, slice each half in half lengthwise to create 4 long, narrow pieces. Carefully insert a popsicle stick into the bottom of each piece, and place them on the baking sheet.
- Prepare Mummy Banana Pops: Trim the pointy tips off the remaining 2 bananas. Slice these bananas crosswise into 3 equal round logs. Insert a popsicle stick into one end of each log, then arrange them on the baking sheet alongside the ghosts. Freeze all banana pops for at least 30 minutes or overnight until firm.
- Make Yogurt Mix & Dip: In a small bowl, whisk together the vanilla Greek yogurt and powdered sugar until smooth. Once the bananas are fully frozen, dip each banana piece into the yogurt mixture, coating them evenly. Return the dipped bananas to the lined baking sheet. Place two mini chocolate chips on each ghost banana pop to create the eyes, but do not add eyes to the mummies yet. Freeze for at least 1 hour to allow the yogurt coating to set.
- Decorate the Mummies: Place the peanut butter in a microwave-safe bowl and heat for 30-45 seconds until smooth and creamy, stirring as needed. Using a small spoon, drizzle the melted peanut butter over the frozen mummy banana pops to mimic mummy bandages. Place mini chocolate chips on each mummy for the eyes. Return the popsicles to the freezer for an additional 30 minutes until the peanut butter is firm.
- Serve: When ready to serve, let the banana popsicles soften at room temperature for a few minutes to ease biting. Enjoy immediately or store them in a zip-top bag in the freezer for up to 2 months.
