Ingredients
Scale
Main Ingredients
- 400 g / 14 oz artichoke hearts in brine, drained
- 250 g / 8 oz frozen chopped spinach, thawed
- 250 g / 8 oz Philadelphia cream cheese
- 1 tsp garlic powder (or 2 garlic cloves, minced)
- ⅓ cup mayonnaise
- ½ cup sour cream or full-fat yoghurt
- 1 cup grated cheese (such as Cheddar, Colby, or Tasty Cheese)
- ½ cup grated parmesan cheese
- Salt and pepper to taste
Instructions
- Prepare Artichokes: Roughly chop the drained artichoke hearts into bite-sized pieces to ensure even distribution throughout the dip.
- Drain Spinach: Squeeze excess liquid out of the thawed spinach using paper towels, a clean dishtowel, or by pressing it in a colander with a wooden spoon to prevent the dip from becoming watery.
- Soften Cream Cheese: Place the cream cheese in a large heatproof bowl and microwave in two 30-second bursts until softened. Mix until smooth and creamy.
- Combine Ingredients: Add the chopped artichokes, drained spinach, garlic powder, mayonnaise, sour cream or yoghurt, grated cheese, grated parmesan, salt, and pepper to the softened cream cheese. Mix gently until all ingredients are just combined, taking care not to overmix to maintain texture.
- Warm the Dip: Heat the mixture in the microwave to your preferred temperature. Taste and adjust seasoning with additional salt and pepper as needed.
- Serve: Serve the dip warm or at room temperature with your favorite crackers, vegetable sticks, or chips for dipping. Enjoy!
Notes
- This dip is traditionally served warm, but it’s equally delicious at room temperature.
- If preferred, bake the dip in an oven to brown the top; however, this is optional and does not significantly enhance the flavor.
- Use full-fat sour cream or yoghurt for best creaminess and flavor.
- Be gentle when mixing to keep the artichokes and spinach from becoming mushy.
- This recipe is quick and easy, making it perfect for last-minute entertaining.
