Ingredients

  • 12 eggs
  • 3/4 cup cottage cheese
  • 1/2 teaspoon salt
  • Pinch of pepper

Filling:

  • 1 pound turkey, pork, or chicken breakfast sausage
  • 1 tablespoon olive oil
  • 1 bell pepper, chopped
  • 1/2 onion, chopped
  • 2 cups fresh spinach
  • 1 1/2 cups frozen diced potatoes
  • 1 cup black beans

Additional:

  • 8 burrito-sized tortillas
  • 1 cup shredded cheddar cheese
  • Chopped cilantro
  • Salsa
  • Guacamole
  • Sour cream

Instructions

  1. Egg Mixture: In a large bowl, whisk together eggs, cottage cheese, salt, and pepper. Set aside.
  2. Filling: Sauté breakfast sausage until fully cooked. Set aside. In the same skillet, sauté bell pepper and onion. Add potatoes, spinach, and black beans. Pour in the egg mixture and scramble.
