Dry Ingredients

Instructions
- Heat the Oil
In a Dutch oven or heavy-bottomed skillet with deep sides, pour peanut oil about 3–4 inches high up the side of the pan. Heat the oil over medium heat to reach a temperature of 350°F. - Mix the Dry Ingredients
In a large bowl, combine the cornmeal, all-purpose flour, granulated sugar, kosher salt, baking powder, baking soda, garlic powder, onion powder, and a pinch of cayenne pepper. Stir the ingredients thoroughly to ensure they are well mixed. - Mix the Wet Ingredients
In a separate medium-sized bowl, whisk together the buttermilk, egg, and grated onion. Once combined, pour the wet ingredients into the bowl of dry ingredients. Stir until no dry patches remain. - Incorporate the Butter
Add the melted and slightly cooled unsalted butter to the batter. Stir until fully combined. - Fry the Hush Puppies
Once the oil has reached 350°F, carefully drop tablespoon-sized dollops of batter into the hot oil. Fry them for 1–2 minutes on each side or until golden brown.
