Instructions
- Prepare the Cheese Mixture: In a large bowl, beat together the goat cheese, cream cheese, cinnamon, honey, and brown sugar (if using) until the mixture is light and fluffy. Fold in 1/2 cup of diced pecans to combine.
- Prepare the Coating: Lay a sheet of parchment paper on your countertop and place the remaining 1 1/2 cups of diced pecans in the center to form a pile.
- Form the Truffles: Using a large cookie scoop or spoon, scoop out portions of the cheese mixture and form into balls. Roll each cheese ball in the pile of pecans on the parchment paper until fully coated.
- Chill: Place the coated cheese ball truffles in a single layer in an airtight container and refrigerate until ready to serve. You can prepare these up to two days in advance.
