Scale
For the Hot Honey
- 80g (1/4 cup) honey
- 1 tsp hot sauce (such as Frank’s or Cholula)
- 1/2 tsp chilli flakes (adjust to taste)
For the Pizzas
- 2 garlic flatbreads (approx. 210g/7.4oz each, 24x18cm/9×7″)
- 130g (1/2 cup) pizza sauce, or as needed
- 180g (2 cups) low-moisture mozzarella, grated (or as needed)
- 12 slices pepperoni, or as needed
- Sliced black olives (optional)
- Fresh jalapeños, sliced (optional)
Instructions
- Preheat the Oven and Tray: Set your oven to 220°C/430°F. Place the oven tray inside as it heats up, ensuring it gets nice and hot. This step will help the flatbread base bake up extra crispy.
- Prepare the Hot Honey: Mix the honey, hot sauce, and chilli flakes in a bowl. Warm in the microwave for 10–20 seconds, stir, and let cool. Alternatively, gently heat the mixture in a small pot until it barely simmers, then let cool. Adjust the heat level by adding more chilli flakes or hot sauce if desired.
- Assemble the Pizzas: Spread pizza sauce evenly over each garlic flatbread. Sprinkle with grated mozzarella, then top with pepperoni slices. Add jalapeños and black olives, if using. Add a few extra pieces of mozzarella over the pepperoni to prevent it from curling during baking.
- Bake the Pizzas: Carefully remove the hot tray from the oven and quickly place your assembled pizzas on it. Bake for 8–10 minutes, until the edges are lightly charred and the cheese is golden and bubbly.
- Add Hot Honey & Serve: Drizzle your preferred amount of hot honey over the finished pizzas. Store any leftover hot honey for another use. Slice, serve, and enjoy your spicy, sweet flatbread pizzas!
Notes
- Hot Honey: Heating then cooling the honey helps the chilli flakes infuse. Adjust spiciness by adding more chilli or hot sauce after cooling, or simply use store-bought hot honey.
- Flatbreads: Sizes/shapes vary; adjust toppings and bake time as needed. Avoid overloading with toppings to prevent a soggy base.
- Pizza Sauce: Homemade or thick store-bought is best; simmer to thicken if watery. Less sauce prevents a soggy pizza.
- Mozzarella: Freshly grated block cheese is ideal. If using brined mozzarella, pat dry thoroughly.
- Oven Tray: A preheated tray ensures a crisp, sturdy bottom crust.
- Leftover Hot Honey: Store in a sealed container for future use.
