Ingredients:

  • 1 whole chicken (3.5 to 4.5 lbs)
  • 1 Tbsp avocado oil
  • 1 1/2 tsp sea salt
  • 2 tsp garlic powder
  • 1 1/2 tsp Paprika
  • 1 1/2 tsp Dried parsley
  • 1/2 tsp black pepper
  • 2 cups apple cider juice or chicken broth*
  • 2 large apples, chopped (optional)

Instructions

  1. Prep the Chicken: Remove the chicken from its packaging, pat dry, and drizzle with avocado oil, ensuring it’s evenly coated.
  2. Season the Chicken: Sprinkle sea salt, paprika, garlic powder, black pepper, and dried parsley over the chicken.
  3. Prepare the Instant Pot: Pour apple cider or broth into the Instant Pot, add apples and veggies, place the trivet, and set the chicken on top.
  4. Cook in the Instant Pot: Seal the lid, pressure cook for 30 minutes, then allow natural release for at least 20 minutes.
  5. Crisp the Skin: For crispy skin, broil the chicken in the oven for 5-8 minutes.
  6. Serve: Accompany with your favorite sides and enjoy!
