  • pounds ground turkey (can sub ground beef, if you’d like)

  • 1 cup thick and chunky salsa (use mild for kids)
  • ½ cup chili sauce
  • 2 tablespoons packed light brown sugar
  • One 4.5-ounce can chopped green chiles (use mild for kids)
  • 2 tablespoons chopped fresh cilantro (optional)


Instructions

  1. Preheat and Prepare Pie Crust: Preheat your oven to 450°F. Unroll the pie crust onto an ungreased cookie sheet. Using a sharp knife, carefully cut a jack o’ lantern face into the crust. Use some of the leftover crust scraps to create a stem and attach it to the top of the face cut-out. Bake the crust for 9 minutes or until it turns a light golden brown.
  2. Cook the Turkey Mixture: While the crust is baking, heat a 10 or 11-inch nonstick skillet over medium-high heat. Add the ground turkey and finely chopped onion. Cook for 8 to 10 minutes, stirring frequently, until the turkey is no longer pink and the onion is soft.
  3. Add Remaining Filling Ingredients: Stir in the corn, thick and chunky salsa, chili sauce, brown sugar, and chopped green chiles. Bring the mixture to a boil, then reduce the heat to medium-low.
  4. Simmer the Filling: Let the mixture simmer for 8 to 10 minutes, stirring occasionally, until all the ingredients are cooked through and flavors meld together.
  5. Finish the Filling: Stir in chopped fresh cilantro if using, adding brightness to the filling.
