Instructions

  1. Prepare the Cream Cheese Mixture
    In a large bowl, use an electric mixer to whip together the softened cream cheese and sour cream until the mixture is smooth and creamy.
  2. Mix in the Fillings
    Add the shredded cheddar cheese, crispy crumbled bacon, finely chopped jalapeno, and thinly sliced scallions into the cream cheese mixture. Stir everything together until fully combined.
  3. Spread the Filling on the Tortillas
    Lay one tortilla flat on a clean work surface. Take 1/5th of the cream cheese mixture and spread it evenly across the tortilla, leaving about a 1/2-inch border around the edges.
  4. Roll and Wrap
    Tightly roll the tortilla into a long log. Repeat this step with the remaining tortillas and filling. Once done, wrap each tortilla roll tightly in plastic wrap, tucking the ends under to seal them.
  5. Chill the Rolls
    Place the wrapped tortilla rolls in the refrigerator for at least 4 hours, or preferably overnight, to allow them to firm up.
  6. Slice and Serve
    Remove the tortilla rolls from the refrigerator and unwrap them from the plastic wrap. Using a sharp knife, cut each roll into 1/2-inch slices. Serve chilled with ranch dressing for dipping, if desired.
