This classic hamburger recipe features juicy, well-seasoned ground chuck patties grilled to perfection. Enhanced with a flavorful homemade spice blend and topped with melted American cheese and fresh toppings, these burgers are perfect for backyard barbecues or casual dinners. Serve on toasted buns with your favorite condiments for a satisfying meal.

Ingredients

Scale

For the Burger Patties

  • 1 ½ pounds ground chuck (80/20)
  • 1 ½ teaspoons freshly ground black pepper
  • 1 teaspoon salt
  • 2 teaspoons paprika
  • ½ teaspoon light brown sugar
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon cayenne pepper

Toppings

  • 6 hamburger buns, toasted if desired
  • 6 slices American cheese or your favorite cheese
  • 6 lettuce leaves
  • 1 beefsteak tomato, thinly sliced
  • ½ of a red or white onion, thinly sliced
  • 6 pickle slices

Optional Toppings and Condiments

  • Sautéed mushrooms
  • Grilled onions
  • Jalapeños
  • Bacon
  • Onion rings
  • Ketchup
  • Mustard
  • BBQ sauce
  • Thousand Island dressing
  • Ranch dressing
  • Homemade Chick-fil-A sauce

Instructions

  1. Make Burger Seasoning: In a small bowl, combine ground black pepper, salt, paprika, light brown sugar, garlic powder, onion powder, and cayenne pepper. Stir to mix thoroughly and set aside.
  2. Form Patties: Divide the ground chuck into 6 equal portions. Gently shape each into a ½ inch thick patty, making them slightly larger than the buns since they will shrink when cooked. Avoid over-handling to keep the meat tender.
  3. Create Indentation: Use your thumb to press a gentle indentation into the center of each patty. This helps the burgers cook evenly and prevents puffing up in the middle. Cover the patties and set aside while preheating your grill. For extra moisture retention, place an ice cube in each indentation until ready to cook.
  4. Preheat Grill: Heat your grill to medium-high heat.
  5. Season and Grill Patties: Just before cooking, sprinkle the prepared burger seasoning evenly over both sides of the patties. Place patties on the grill, indentation side up. Close the grill lid and cook for 3-4 minutes, until the bottoms are seared and juices appear on top. Flip the burgers and cook for another 3-4 minutes, or until the internal temperature reaches 160°F (71°C) for medium doneness.
  6. Add Cheese: During the last minute of cooking, place a slice of American cheese on each patty to melt.
  7. Rest and Assemble: Remove the patties from the grill and let them rest for a few minutes. Serve on toasted hamburger buns with lettuce leaves, tomato slices, onion slices, pickle slices, and your favorite condiments and optional toppings.

Notes

  • Meat Choice: Prefer ground chuck for better flavor and fat content; a mix of 60% ground chuck and 40% brisket works well too. For lean ground beef, add chopped bacon or a tablespoon of olive oil to maintain juiciness.
  • Cheese Selection: American cheese melts best for burgers. Opt for fresh deli slices instead of processed singles.
  • Stovetop Cooking Option: Heat a cast iron skillet over medium-high heat with a thin layer of oil. Cook patties 3-5 minutes per side until they reach 160°F.
  • Cooking Times: Medium doneness is about 3-4 minutes per side; adjust timing for desired doneness.
  • Make Ahead: Form patties and separate them with parchment paper. Store covered in the refrigerator for 1-2 days.
  • Freezing: Freeze raw patties with parchment paper between them in an airtight container for up to 3 months. Thaw fully before cooking.
