Instructions

  1. Remove Beef from Refrigerator: Take the bottom round beef out of the refrigerator about one hour before cooking to bring it to room temperature, ensuring even cooking.
  2. Preheat Oven and Prepare Rub: Preheat your oven to 425℉. In a small bowl, combine the minced garlic, rosemary, kosher salt, thyme, and black pepper to create the garlic herb rub.
  3. Season the Beef: Lightly coat the beef with olive oil to help the rub adhere, then evenly rub the garlic herb seasoning all over the surface of the meat.
  4. Roast at High Heat: Place the seasoned beef on a rack inside a roasting pan. Roast in the preheated oven at 425℉ for 15 minutes to develop a flavorful crust.
  5. Reduce Heat and Continue Roasting: Lower the oven temperature to 325℉ and roast the beef for about 1½ hours, or until the internal temperature reaches 130℉ for medium rare or 140℉ for medium doneness.
