These Keto Pralines deliver rich, buttery sweetness and a delightful crunch without any added sugar. Made with roasted pecans, creamy caramel-like sauce using Swerve and heavy cream, they’re the perfect low-carb, sugar-free treat for anyone following a ketogenic or diabetic-friendly diet. Ready in just 15 minutes, they’re quick to make and require only a handful of ingredients.

    • 1 cup (112g) raw pecans

Caramel Mixture

  • 1 stick (112g) salted butter, cut into pieces
  • Heaping 1/3 cup (65g) Confectioners Swerve
  • 4 ounces (120mL) heavy cream
  • 1 teaspoon (4g) pure vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to get it ready for roasting the pecans.
  2. Prepare Pecans: Add all of your pecans to a medium-sized bowl and set aside.
  3. Get Ingredients Ready: Add confectioners Swerve to a large bowl, prepare heavy cream in a small cup, and cut up the butter into small pieces. Set each aside in their respective bowls.
  4. Roast Pecans: Spread the pecans on a baking sheet lined with parchment paper. Roast them in the oven for a couple of minutes until they become fragrant. Remove from the oven and set aside.
  5. Start Caramel Base: In a pan over medium heat, add all but about a tablespoon of the butter. As it begins to melt, add the Swerve and heavy cream. Use a spatula to continuously stir and combine these ingredients as they blend and start to thicken.
  6. Develop Caramel: Keep stirring the mixture until it takes on a golden caramel color, indicating that the caramel is forming.
  7. Finish Caramel & Add Vanilla: Turn off the heat, then add the reserved tablespoon of butter and the vanilla extract. Mix thoroughly until the butter and vanilla are well incorporated and the mixture is smooth.
  8. Add Pecans: Pour the roasted pecans into the caramel mixture within the pan. Use a spatula to coat all the pecans evenly with the caramel.
  9. Portion Pralines: Use a tablespoon to scoop out portions of the mixture, placing them on a baking sheet lined with parchment paper. Repeat until all the mixture is used.
  10. Set Pralines: Place the baking sheet in the fridge for about an hour or until the pralines are fully set and firm. Once set, they are ready to enjoy.

Notes

  • The scale up function does not change the gram measurements; always double-check weights if adjusting batch sizes.
  • Use only 4 ounces of heavy cream as listed in the recipe (not 8 ounces, as mistakenly mentioned in some sources).
  • Be attentive while roasting pecans so they do not burn; they only need to be roasted until fragrant.
