- 1 cup (112g) raw pecans
Caramel Mixture
- 1 stick (112g) salted butter, cut into pieces
- Heaping 1/3 cup (65g) Confectioners Swerve
- 4 ounces (120mL) heavy cream
- 1 teaspoon (4g) pure vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 400°F (204°C) to get it ready for roasting the pecans.
- Prepare Pecans: Add all of your pecans to a medium-sized bowl and set aside.
- Get Ingredients Ready: Add confectioners Swerve to a large bowl, prepare heavy cream in a small cup, and cut up the butter into small pieces. Set each aside in their respective bowls.
- Roast Pecans: Spread the pecans on a baking sheet lined with parchment paper. Roast them in the oven for a couple of minutes until they become fragrant. Remove from the oven and set aside.
- Start Caramel Base: In a pan over medium heat, add all but about a tablespoon of the butter. As it begins to melt, add the Swerve and heavy cream. Use a spatula to continuously stir and combine these ingredients as they blend and start to thicken.
- Develop Caramel: Keep stirring the mixture until it takes on a golden caramel color, indicating that the caramel is forming.
- Finish Caramel & Add Vanilla: Turn off the heat, then add the reserved tablespoon of butter and the vanilla extract. Mix thoroughly until the butter and vanilla are well incorporated and the mixture is smooth.
- Add Pecans: Pour the roasted pecans into the caramel mixture within the pan. Use a spatula to coat all the pecans evenly with the caramel.
- Portion Pralines: Use a tablespoon to scoop out portions of the mixture, placing them on a baking sheet lined with parchment paper. Repeat until all the mixture is used.
- Set Pralines: Place the baking sheet in the fridge for about an hour or until the pralines are fully set and firm. Once set, they are ready to enjoy.

- Use only 4 ounces of heavy cream as listed in the recipe (not 8 ounces, as mistakenly mentioned in some sources).
